| Leaf pruning, cane pruning top/sides
and cluster removal. All grapes are hand harvested
and hand sorted to remove clusters with raisins, mold,
pinkos and greenies. Care is directed to TOTAL development
from green to brown seeds and stems for mature fruit
and firm smooth tannins. Hangtime is lengthy which
produces mature balanced fruit, which produces balanced
wine. |
